OpenTable says restaurant adoption of voice AI grew sixfold in a year. Here's what actually changed, who's driving it, and what it means if you're deciding now.

Restaurant adoption of voice AI grew roughly sixfold between January 2025 and January 2026, according to Robin Chiang, OpenTable's chief growth officer, a sign that AI phone answering moved from an early-adopter experiment to a mainstream operating decision for restaurants in the space of a single year. That single number is worth pausing on, because it isn't marketing from any one vendor; it's a platform-level view from the reservations system most restaurants already run on. Something changed structurally in 2026, not just at the margins.
What actually changed: the plumbing got built
For years, adding a voice AI vendor to a restaurant's phone line meant a bespoke integration project: someone had to wire the vendor into the POS and the reservation system by hand. In 2026, the major platforms opened that up as standard connections instead of one-off projects:
- OpenTable integrated with multiple voice AI vendors (Loman AI, VOICEplug and SoundHound among them), turning automated phone reservations into an out-of-the-box option rather than custom work.
- Yelp launched its own voice product, Yelp Host, in October 2025, then (2026-07-28) added its own OpenTable reservation automation plus phone-order routing into Toast, Square and Clover.
- Toast opened its Partner Ecosystem to voice vendors; Loman AI joined as an official partner, giving restaurants a native integration path instead of a workaround.
- Payments platforms followed the POS platforms. Shift4 added Loman AI's voice ordering to its Dine POS marketplace in June 2026, following an earlier SpotOn integration in January; voice AI is now something a restaurant can add from inside the systems it already runs, not a separate vendor relationship layered on top.
Put together, a restaurant deciding to answer its phone with AI in 2026 is choosing a vendor, not commissioning a project. That's a much smaller decision than it was in 2024, and smaller decisions get made faster and more often.
The proof points got bigger, and more specific

- Steakhouse chain Fogo de Chão put PolyAI's voice agent live across all 88 of its U.S. locations in February 2026, reporting a 95% guest-satisfaction score and an 88% booking-completion rate on the calls it handles.
- Canary Technologies rolled out its AI Voice product globally with Wyndham Hotels & Resorts, then launched a broader Hospitality AI Agent Studio in March 2026 for hoteliers to build their own agents on top of existing PMS/CRS connections.
- Restaurant-specific vendors like Loman AI now cite proof in the thousands of live restaurants rather than pilot case studies.

But the direction is consistent: named enterprise deployments with hard numbers attached, not just "early results look promising."
Why now, and not two years ago
Three things had to happen roughly together for adoption to move this fast, and 2026 is when they overlapped:
- Voice quality crossed a threshold. Newer audio-native models (PolyAI shipped one called Dialog-RSN-1 in July 2026) handle real restaurant background noise and interruption better than the text-to-speech-bolted-on-a-chatbot approach most 2023-era products used.
- Integration stopped being bespoke. The OpenTable, Toast and Shift4 moves above mean a restaurant no longer needs an engineer on staff, or a long implementation project, to get a voice AI vendor talking to the systems it already runs.
- Margin pressure didn't let up. Labor costs and razor-thin restaurant margins didn't improve in 2026: a phone line that answers itself around the clock, without a shift to schedule, is a cost problem it solves whether or not "AI" is the interesting part of the pitch.
What this means if you're deciding now
The practical upshot: you're not evaluating an unproven category anymore. The open questions for most restaurants and hospitality operators today aren't "does this work" (the OpenTable adoption curve and the named deployments above answer that); they're narrower and more useful ones:
- Does the vendor connect to your specific POS or reservation system, or would you be the integration project?
- Is the price published, or a sales-led quote, and does that match how quickly you actually want to be live?
- Is it built for your kind of venue (single restaurant, hotel, multi-site group) rather than a general-purpose "Service CX" platform with a hospitality landing page bolted on?
